The Chef of the Brasserie Le Sud

Our Chef Sébastien Cornu embodies the generosity and brightness of Mediterranean cuisine in the heart of Lyon. Passionate about the flavors of the South, he offers a sunny, colorful cuisine that celebrates fresh produce, fragrant herbs, and the Provençal art of living.

He joined the Maisons Bocuse in January 2025 as Sous-Chef at Brasserie Le Sud, where he quickly stood out for his high standards, precision, and love of culinary creativity. Thanks to his keen attention to detail and technical expertise, he rapidly earned the trust of both his teams and the House.

Since September 1st, 2025, he has held the position of Junior Head Chef, a role in which he fully expresses his talent and passion for sun-inspired cuisine. Under his leadership, the kitchen of Brasserie Le Sud continues to shine with a gastronomy inspired by the Mediterranean coast—generous, elegant, and full of vitality, true to the spirit of Provence.

Faithful to the values of the Maisons Bocuse, Chef Cornu carries on the promise of a convivial and refined table, where every dish is an invitation to travel between sea, sunshine, and tradition.
