Our Chefs and kitchen brigades

Managed by Executive Chefs Franck Ferigutti, Eric Pansu and  Olivier Bourrat, all of our chefs and kitchen brigades are dedicated to serve excellence. For each one of them, excellence and quality are found in rendering  authentic, rich and generous recipes made from fresh and local products. From a traditional Lyon cuisine to a more sophisticated one, you are guaranteed to encounter a menu that you will love. 

In the pastry shop, our pastry chefs work daily to provide you with the tastiest and most seasonal delicacies.

As Monsieur Paul used to say, “To receive someone is to take care of their happiness”. In order to respect his legacy, each of our service teams is dedicated to ensure that you spend a moment out of time when you visit our Restaurants and Brasseries in Lyon, Annecy and Paris. Sense of responsibility, enthusiasm, customer orientation and professionalism are at the heart of the motivations of our managers and service teams.

Our office teams

The headquarters of Les Maisons Bocuse and all our office teams are located in the Brasserie L’Ouest in Vaise: human resources, finance, accounting, sales, general services,marketing, and communication. All of them have a  common  objective of developing Les Maisons Bocuse and our online gourmet store in strict compliance with the values and expectations of Paul Bocuse.
