The Chef of the Fond Rose Restaurant

Chef Laurent Henry embodies the elegance and generosity of Lyonnais cuisine in a unique setting nestled along the banks of the Saône. Passionate about seasonal produce and the respect of tradition, he creates a refined and sincere cuisine that reflects the spirit of Maison Fond Rose—a family-oriented place in an exceptional setting in Lyon.


He joined the Maisons Bocuse in January 2022 as Junior Sous-Chef at Brasserie L’Ouest, where he first contributed to the culinary excellence of L’Ouest before continuing his journey within the Group. Each day, he brings to life the values of our Houses: respect for ingredients, a taste for precision, and a genuine love of craftsmanship.


Since October 1st, 2025, he has led the kitchens of Maison Fond Rose, where he now places his talent and attention to detail at the service of an authentic, convivial, and family-style cuisine.


His ambition is to make Fond Rose a place of sharing and emotion, where every dish tells a story and carries forward the Bocuse spirit.

The Manager of Restaurant Fond Rose

A longstanding member of the Bocuse Group, Loïc Jacquand embodies the spirit of the Houses and the high standards of service that have built the reputation of Restaurant Fond Rose in Lyon, nestled along the banks of the Saône and opening onto its iconic garden.


His journey began in 2002 as a Dining Room Assistant (Commis de Salle) at Brasserie L’Est, before continuing his progression at Brasserie L’Ouest and Brasserie Le Sud, where he became Assistant Manager in 2006 and Junior Manager in 2008. These successive experiences enabled him to develop a comprehensive vision of service and team management.


On March 5th, 2015, Loïc Jacquand was appointed Manager of Restaurant Fond Rose, an exceptional venue he has supported daily with rigor, a strong sense of hospitality, and a deep commitment to the guest experience. For him, Restaurant Fond Rose is above all a living House, where conviviality, precision of service, and the elegance of the setting naturally come together.

Book a lounge or privatise the Fond Rose Restaurant

The Fond Rose Restaurant is an ideal place for your family, friends or professional receptions. 

Four lounges are available for your business meals or wedding receptions: the 28m2 Collonges lounge which can accommodate between 20 and 24 people, the 50m2 flexible lounge which can welcome between 25 and 40 people, the 15m2 Saône lounge which can host between 2 and 12 people and finally the Île Barbe lounge which can receive between 15 and 22 people. The entire restaurant and garden can also be privatised.
