The chef of the Brasserie L'Est

Originally from the Lyon region, Chef Brice Clémenti pursued a CAP in Culinary Arts and completed a two-year apprenticeship at the traditional restaurant Le Capot in Caluire. He joined the Bocuse Group in 2006 as a Commis Chef at Brasserie L’Ouest, where he remained until 2012, before taking part in the opening of Restaurant Fond Rose the following year. He worked there until 2015 as Chef de Partie, then joined Brasserie Le Nord as Sous-Chef and later as Junior Chef in 2016.

He subsequently continued his career at Brasserie Le Sud, where he successfully carried on the House’s culinary tradition.

In September 2025, he returned to his home of the heart, Brasserie L’Est.
For the Chef, cooking is above all a matter of memories—those of his childhood, as well as the cuisine of his grandmother and his mother.
